Best Soups for a Florida Fall

System - Friday, October 15, 2021

Say hello to fall! Gone are the hot and humid days. Bring on the cooler temps and rain! And on a cloudy, wet day, there’s nothing better than a bowl of your favorite soup. Just because you’re in Florida, doesn’t mean you can’t celebrate fall, too.

We’ve put together some of our favorite low-maintenance recipes that will be sure to bring you into the fall mood. Most can be made in an instant or crockpot to keep the temps in your home cool.

Here are a few of our favorite recipes to get you started. We’re sure after you read the descriptions, you’ll be headed out for ingredients. When you do, check out Brothers Farmers Market.

Instant Pot French Onion Soup

French onion is always a great choice when you’re eating out. Now you can bring it into your home. With this instant pot recipe, you won’t even have to worry about your home heating up on those still warm Florida days. For this flavorful soup, just grab a bottle of dry white wine for the recipe being starting. Check out Crown Wine & Spirits if you need quality wine. You’ll also need 8 oz. of gruyere or Swiss cheese to sprinkle evenly across the top of the soup just before serving.

This recipe will speeds up the cooking time at a total of 50 minutes from start to finish. It’s also a great recipe when you’re entertaining or for pot lucks.

Roasted Cauliflower Soup

Want to incorporate more veggies in your meals? We have a delicious recipe for you! Give this one a go. This soup looks creamy, but it’s free from cream and cheese. Instead, the rich texture comes from a bit of butter. If you need a vegan or dairy-free version, the chef includes notifications as well. It’s also already gluten-free for anyone with a more restrictive diet.

Sautéed onions and hints of nutmeg and lemon pair perfectly with the flavor of the oven-roasted cauliflower. You’ll need a blender for this one to get the right consistency. Don’t forget to get a topping for the soup. Green onions, parsley or chives are great options.

Florida Broccoli and Avocado Soup. This one may seem a little unusual at first, but we know the creamy, cool flavors will win you over. And with so many Florida ingredients highlighted, you can’t not have a little state pride here. The recipe calls for broccoli, avocado, and spinach — all grown in our home state.

The entire recipe can be made in a crockpot (easy and cool). Your end result will be a bright and smooth soup. Add croutons and cheese to the top for extra texture and flavor. These are optional, though. The soup is perfect on its own.

Chicken Noodle. You’ll want to save this chicken noodle soup recipe! It’s perfect for the classic soup or anyone feeling under the weather. It calls for the classics– celery, carrots, garlic and onion, with parsley, salt and pepper. Flat-leaf parsley to add to the flavor. This recipe is especially easy because It calls for rotisserie chicken. Even better, you’ll make this soup entirely in one large pot or Dutch oven.

Starting by browning the veggies in olive oil (stir the whole time to prevent burning), adding the stock and bay leaves, bringing to a boil, then set the temperature to medium for about 10 minutes while the veggies finish cooking. Add in egg noodles, chicken and seasonings, and simmer until it’s all cooked through.
